At Glass Box Del Mar, you can visually see Chef Ethan Yang’s determination to provide a unique dining experience – in the plating of every dish, the flavor profiles, and the quality of the fresh sushi.  Whether you order items from the raw bar (e.g. oysters, carpaccio, crudo), specialty sashimi (e.g. bluefin flight, whole aji sashimi), rolls, e.g. bluefin tuna rolls, flamin’ cheetos rolls, lobster rolls) nigiri/sashimi, or cooked dishes (e.g. Chilean sea bass, teriyaki salmon, robata filet mignon), you are in for a spectacular meal.

The Glass Box Del Mar was the last of the restaurants to open in the Sky Deck in the Del Mar Highlands, but it was certainly worth waiting for.  For months I watched the spectacular glass enclosure being built – it is a visually spectacular restaurant, and the food is equally as impressive.  Chef Ethan is a 3rd generation chef, who is following in the footsteps of his grandma, grandpa, and father.  He is the Owner and Executive Chef of Glass Box.

STANDOUT DISHES YOU SHOULD ORDER

  • I have ordered and enjoyed the Chilean Sea Bass on multiple occasions. The fish is seasoned and cooked perfectly – and served with a delicious shiitake reduction.  I would highly recommend this dish.
  •  A creative way to truly experience Glass Box would be to let their sushi chefs lead you through their 10 or 15-course Omakase Experience. You’ll see not only how delicately each dish is plated, but the unique flavors and quality of the fish they source from around the world.
  • The A5 Wagyu Hot Stone is cooked tableside and served with wasabi (pickled jalapenos), truffle salt, and crispy garlic chips.  
  • The Hanabi Crispy Rice is so good – the combination of spicy tuna, spicy mayo, and eel sauce served on warm, crispy rice is a must-order item.

It is no surprise that Glass Box Del Mar gets stunning reviews from diners.  The service is top-notch, and if you are looking for a fine-dining sushi experience, that is exactly what you are going to get.
