Los Tres Gallos Cabo Michelin Guide Tasting Menu

Los Tres Gallos Cabo

When I travel, I’m always searching for restaurants that tell a story through their food. During a recent trip to Cabo San Lucas, I found exactly that at Los Tres Gallos Cabo.

I experienced the restaurant’s five-course Michelin Guide tasting menu, and it turned out to be one of the most memorable meals I’ve had in Mexico. The lunch combined exceptional food, warm hospitality, family history, and a genuine passion for preserving traditional Mexican cuisine. Each dish was thoughtfully prepared, beautifully presented, and full of flavor.

What made the experience even more special was having Chef Jaime personally visit our table throughout the meal to explain each course. Hearing about the ingredients, techniques, and inspiration behind every dish gave me a deeper appreciation for the meal and the people who created it.

After spending time at Los Tres Gallos Cabo, it’s easy to understand why the restaurant has earned recognition from the Michelin Guide in both 2024 and 2025.

A Family-Owned Restaurant Built on Tradition

One of the first things that impressed me about Los Tres Gallos Cabo was learning about its history.

The restaurant opened 16 years ago as a small family-owned business with just four tables. The goal was simple: serve authentic Mexican cuisine rooted in family recipes and traditional cooking methods. Over time, word spread, locals and visitors fell in love with the food, and the restaurant steadily grew into one of Cabo San Lucas’ most respected dining destinations.

The owner’s mother served as the original chef, and her influence can still be seen throughout the menu today. Many of the recipes and techniques that helped establish the restaurant remain an important part of the dining experience.

Today, the restaurant occupies a beautiful space in downtown Cabo San Lucas while maintaining the same welcoming atmosphere that made it successful from the beginning. There is also an upstairs area that is ideal for private events, celebrations, rehearsal dinners, and corporate gatherings.

Despite all of its success and recognition, Los Tres Gallos Cabo still feels like a family business that genuinely cares about every customer who walks through the door.

Meeting Chef Jaime Made the Experience Even Better

Great food is always memorable, but for me, meeting the chef behind the dishes elevates the meal to another level.

Throughout the meal, Chef Jaime personally introduced each course. He explained the ingredients, discussed the preparation process, and shared why each dish was important to Mexican culinary traditions.

His passion for cooking and the dishes is impossible to miss.

You could see how much pride he takes in preserving traditional Mexican flavors while showcasing the incredible ingredients available throughout Baja California Sur. Every explanation added context to the dish and helped us appreciate the craftsmanship behind it.

Having Chef Jaime interact with us and hearing him speak about his food at Los Tres Gallos Cabo was one of the highlights of the meal. It became clear that every dish served at Los Tres Gallos Cabo is created with purpose, care, and respect for Mexican culinary heritage.

A Michelin Guide Tasting Menu

The Michelin Guide tasting menu at Los Tres Gallos Cabo showcases traditional Mexican cuisine at its finest.

While the menu features a bowl of pozole featuring traditional pork and nixtamalized corn accompanied by lettuce, radish, avocado, red onion, oregano, cream, chile piquin, and crispy tostadas, I enjoyed the Sopa de tortilla. It was rich, flavorful, and a wonderful introduction to the meal.

The second course was an enchilada verde filled with chicken and topped with a bright green tomatillo and chile sauce. The flavors were fresh, vibrant, and perfectly balanced.

Next came an enchilada de mole, which was one of my favorite courses of the night. The mole sauce delivered incredible depth and complexity while still allowing the other ingredients to shine. Every bite revealed another flavor I hadn’t tasted in the previous bite.

The fourth course featured a chile relleno stuffed with melted cheese and topped with fresh tomato sauce. This classic Mexican dish was executed beautifully and showcased the kitchen’s attention to detail.

Dessert was a delicious homemade flan topped with caramel sauce. Smooth, creamy, and not overly sweet, it provided the perfect ending to the meal.

What stood out throughout the meal was the consistency. Every course was excellent. Every plate was carefully plated. Every ingredient served a purpose. The attention to detail was remarkable from beginning to end.

Accommodating Dietary Restrictions at Los Tres Gallos Cabo

One aspect of the evening that deserves special recognition is how the restaurant handled dietary restrictions.

My wife follows a gluten-free, dairy-free, and pescatarian diet. Anyone who travels with dietary restrictions knows that tasting menus can sometimes be challenging. Some restaurants simply remove ingredients or offer limited substitutions.

That was not our experience at Los Tres Gallos Cabo.

The kitchen thoughtfully created alternative dishes specifically for her dietary needs. Rather than making her feel like an afterthought, they ensured she received dishes that were every bit as creative and delicious as the standard tasting menu.

Throughout the meal, she kept commenting on how much she loved each course. In fact, she spent much of the meal raving about the dishes prepared specifically for her.

That level of hospitality speaks volumes about a restaurant. The team didn’t just accommodate her restrictions. They embraced the challenge and delivered an exceptional dining experience.

For travelers looking for gluten-free dining, pescatarian options, or dairy-free accommodations in Cabo, Los Tres Gallos Cabo proved that dietary restrictions don’t have to mean compromising on quality or flavor.

Well-deserved Michelin Guide Recognition

The Michelin Guide expanded into Mexico in 2024, and Los Tres Gallos Cabo earned recognition during both the 2024 and 2025 selections. After experiencing the restaurant firsthand, that recognition is understandable.

The Michelin Guide honors restaurants that consistently deliver quality, technique, personality, and a strong sense of place. This restaurant checks every box.

The commitment to sourcing local ingredients is evident throughout the menu. The respect for traditional Mexican cooking techniques shines through every dish. The service is warm and genuine. The atmosphere is lively and inviting.

I especially enjoyed the beautiful outdoor dining area. String lights create a festive ambiance, and guests can watch the culinary team at work thanks to the open kitchen. Seeing the chefs prepare dishes throughout the meal adds so much to the experience.

Everything about Los Tres Gallos Cabo feels authentic. Instead, it feels like a genuine celebration of Mexican culture, family traditions, and exceptional food.
