I recently dined at Nómada Restaurant in Carlsbad, and everything about the meal was wonderful. Admittedly, I have been waiting for Chef Alex Carballo to open this restaurant as soon as I heard the news. And unsurprisingly, it immediately makes it on my list of the best Carlsbad restaurants.
The first time I met Chef Alex was at a live fire food festival, and that moment has stuck with me. He served a dish made with grilled carrots, and it completely changed how I think about vegetables. It was simple and full of flavor, and I still think about it. That dish showed how much care and creativity he brings to his cooking. When I heard he was opening Nómada Restaurant, I was genuinely excited, because I knew that same thoughtfulness would carry into this restaurant.
Nómada Restaurant is located at 6996 El Camino Real, and it is a wonderful family-oriented addition to the Carlsbad food scene. The decor is warm and inviting, with indoor and outdoor seating that works just as well for a casual dinner as it does for a celebration. The patio is a standout area, with fire pits, comfortable lounge seating, and plenty of space for families or friends to enjoy the fresh air while sipping drinks and sharing dishes.
Inside, the central bar acts as the centerpiece of Nómada Restaurant, with views of the wood-fired oven and raw bar, making it a fun spot to watch the kitchen in action while enjoying a cocktail.
Chef Alex Carballo is clearly cooking from a place of passion. You can taste it in every dish at Nómada Restaurant. His food is rooted in regional Mexican traditions, with strong coastal influence, and everything feels well thought out.
The menu at Nómada Restaurant gives you a lot of options, and it’s hard to go wrong. Seafood is a big highlight here. They include wood-fired oysters, ceviches, and crudo tostadas. Tacos range from Baja fish to carnitas, pulpo, quesabirria, and duck mole.
They also offer larger dishes like the whole roasted fish and cochinita pibil, which are great for sharing and show off the kitchen’s technique.
- Shrimp Aquachile with passion fruit: chile citrus-cured seafood, cucumber, red onion, avocado, tostadas
- Guacamole: fresh avocado, lime juice, cilantro
- Prime Carne Asada Taco: grilled flank steak, morita tomatillo salsa, guacamole, cilantro, onions
- Chicken Mole: wood-fired chicken, mole negro, rice, toasted sesame seeds
- Pulpo Taco: charred pulpo, crispy papas, macha aioli, charred citrus pico
- Crudo Tostada: avocado, aioli, sesame seeds, salsa tamarindo
Nómada Restaurant also has an incredible lineup of salsas, ranging from mild to fiery on a 1–10 scale. I tried a few of the lower- to mid-level options and loved sampling the variety. The Salsa Tatemada is a perfect balance of roasted tomatoes, jalapeños, garlic, and serranos with just enough spice to wake up your taste buds. The Salsa Macha, which is nutty, chunky, and full of smoky depth, was my favorite. I didn’t dare tackle the Salsa Habanero Cremosa. They’re all perfect for pairing with tacos, chips, or just sampling on their own.
The cocktail program at Nómada Restaurant also deserves mention and attention. The cocktails focus on agave spirits and Latin American inspiration. And they pair naturally with the food. The Debutante has mezcal, rose vermouth, manzanilla sherry, raspberry thyme shrub, and lemon. And a non-alcoholic Chica Morada has traditional Peruvian purple corn tea, pineapple, apple, and spice.
There’s also a solid wine list at Nómada Restaurant with options from Valle de Guadalupe and California, plus a good mix of local and Mexican beers.
The food at Nómada Restaurant is excellent, the decor is warm and welcoming, and Chef Alex Carballo’s talent comes through clearly in every dish. You can tell he cares deeply about what he’s putting on the plate, and that makes the experience feel special.
The happy hour at Nómada restaurant is a great reason to stop by early in the evening. It runs Monday through Thursday from 3 to 6 p.m., offering a selection of discounted cocktails, beer, and small bites. It’s the perfect chance to try a few of their standout tacos, wood-fired snacks, or fresh seafood while enjoying the lively bar atmosphere.
If you enjoy regional Mexican food, coastal flavors, and restaurants that focus on customer experiences, Nómada Restaurant is absolutely worth your time. I had a fantastic meal, and I’m already looking forward to visiting again. You can make reservations online.
