Pueblo Pacific Beach is getting ready to celebrate its 10-year anniversary this September. And after my dinner there this week, it’s easy to understand how they’ve built such a loyal following. The food was outstanding, the service was just as impressive, and I’d recommend every dish we ordered.
Pueblo Pacific Beach serves Baja-inspired Mexican cuisine in a beautiful space just a couple of blocks from the beach. There’s a comfortable dining room, an outdoor courtyard, and a rooftop with sunset views. During my visit, the rooftop was packed with a large group enjoying dinner. It’s a great space for private events or enjoying a Pacific Beach evening.
One of the highlights of the evening was spending time in the kitchen with Chef Angel. I had the chance to watch him prepare one of the Pueblo Pacific Beach signature dishes (Scallops Cortez). What stood out most wasn’t just his technique. It was how excited he was talking about the food. You can tell he genuinely loves cooking, and that passion comes through in every plate.
If you’re only ordering one entrée at Pueblo Pacific Beach, make it the Bone-In Short Rib Barbacoa. The tequila-braised short rib was incredibly tender. The bone slid right out with almost no effort, which tells you everything before taking the first bite.
It’s served over a creamy poblano polenta with crispy shallots, pickled jalapeños, agave-glazed rainbow carrots, and micro cilantro. I paired it with the Tijuana street corn off the cob, and together they were my favorite part of the meal.
Every dish we tried was excellent, but a few stood out. (Pro tip: Pair them with one of their signature margaritas, Agave-infused or Baja-inspired cocktails.)
The Birria & Poblano Empanadas were an easy favorite. They were originally created as a Halloween special, but guests at Pueblo Pacific Beach loved them so much they became a permanent menu item. Filled with braised short rib, I’d order them again in a heartbeat.
The Honey Chipotle Salmon is another dish I’d happily recommend. The marinated salmon is served with sautéed baby carrots, asparagus, and micro cilantro. It’s fresh, flavorful, and cooked perfectly.
Between the food, the service, Chef Angel’s passion, and the rooftop atmosphere, Pueblo Pacific Beach reminded me why I love recommending restaurants like this. It’s perfect for everything from a casual dinner to celebrating something special.
They’re open for lunch and dinner, and have a weekday happy hour that includes their Clasico Margarita for $8, Tijuana Street Corn for $4, and Daily Ceviche for $8.
I’ll definitely be back to Pueblo Pacific Beach. And when I do, I am pretty sure that the Bone-In Short Rib Barbacoa will be part of my order…plus another plate of those empanadas.
