Zuma San Diego: A Stunning New Addition to Downtown

Zuma San Diego

As you walk up the steps at The Guild Hotel, you just know that you are headed for something special. Once you step inside and get the first look at Zuma San Diego, the energy is unmistakable. The restaurant has a cool, sophisticated vibe and an open, inviting layout. And you immediately recognize it as something important for downtown San Diego.

San Diego is the first California location for the internationally known contemporary Japanese izakaya brand, which began in Knightsbridge, London, in 2002. Chef and co-founder Rainer Becker developed the concept after spending six years immersed in Japanese cuisine and culture while working in Tokyo. Zuma has since expanded to cities around the world, including Miami, New York, Las Vegas, Boston, Vail, Hong Kong, Rome and Madrid.

The setting is a big part of the dining experience. Zuma San Diego has extensive space at The Guild Hotel, with indoor and outdoor seating, a garden terrace, a wraparound bar, and a dedicated DJ booth. The design draws inspiration from the Baja California landscape, combining natural stone, large boulder elements, Japanese-inspired timber screens and other handcrafted details.

The menu follows Zuma’s signature izakaya style, with dishes that are meant to be shared. The open kitchens add so much to the visual experience, while the sushi counter and robata grill give diners a view of the chefs.

I ordered some of the dishes that have made Zuma San Diego a hit: Black cod marinated in Saikyo miso, wrapped in hoba leaf; Salmon, tuna, seabass and yellowtail with avocado and yuzu kosho mayo; Premium Japanese Wagyu striploin with chili ponzu and yuzu tahoon; and Salt-grilled branzino with burnt tomato.

The black cod is one of Zuma’s signature dishes, and I would consider it a must-order dish. The San Diego menu also features an extensive sushi and sashimi selection, robata dishes, Wagyu and specialty beef, seasonal dishes, and omakase.

The drinks get the same attention to detail, with more than 40 varieties of sake, Japanese spirits, and cocktails ranging from the Zuma Paloma to the Chili & Passion Fruit Margarita
